Pre-cooked Lamb - biradmin - 10-30-2022 The recipe and cooking method detailed below is for pre-cooked lamb or you can use mutton if you like Ingredients: 1 kg Boneless Lamb/Mutton trimmed and cut into 1 inch pieces 8 tbsp Vegetable Oil 4 Green Cardamon 1 piece of Cinnamon (Cassia Bark) 3-4 Indian Bay Leaf (Tej Pata) 1 Diced Onion 1 Heaped tsp salt 2 tbsp Ginger & Garlic Paste 2 tbsp Tomato Puree 1 tsp Kashmiri chilli powder 2 tsp madras curry powder 2 tsp coriander Powder 1 tsp cumin powder 1 tsp garam Massala powder 4 cups of water (or enough to cover the lamb/mutton Method: 1. Place lamb into a pan, put pan on medium heat and add boiling water from a kettle to cover. Continue to boil for 10 minutes. Remove scum. Turn off heat and set aside. 2. Place another pan on the heat and add the oil. Heat the oil. 3. Add the Cardamon, Cassia and bay leaves and fry for 1 minute. 4. Add the onion and salt and cook until the onions start to soften. 5. Add the garlic/ginger paste and cook for approx. 5 minutes until the rawness of the garlic and ginger is cooked out and the onions just start to turn golden. 6. Add the chilli powder, curry powder, coriander powder, cumin powder and garam masala powder then cook for 1 minute stirring constantly 7. Add the tomato puree and cook for a further 2 minutes 8. Strain the lamb. 9. Add a cup of hot water from a kettle to the dish and cook for 1 minute. 10. Add the lamb to the dish and stir in. Cook for another 4-5 minutes 11. Add water to cover the lamb/mutton and turn heat down to a simmer for 1 hour or until the lamb/mutton is tender. 2. The pre-cooked lamb can be stored in the liquid and used or refrigerated |
